Easy recipe!!
These shortbread cookies are so good and just a small one is very filling. Come to think of it, a cup of the Earl Grey tea would compliment these cookies! Tea and shortbread cookies, what a treat.
Ingredients:
8 ounces butter ( 2 sticks ) room temperature
( use sweet salted butter)
1/2 cup of powdered sugar plus 1 tablespoon
2 cups of all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon of vanilla extract
pinch of salt
Combine all ingredients; use hands to knead the shortbread dough until ingredients are blended. Press shortbread dough into ungreased pie pan and then flip it out on to an ungreased baking sheet. (or chill shortbread dough and roll out to about 1/2-inch on a floured board and cut into shapes). Bake shortbread at 325° for about 30 minutes, or until lightly browned.
Remove from oven then sprinkle with chocolate chips, chopped walnuts,
and lightly sprinkle with brown sugar.
Cut into wedges while warm or break apart shortbread
